Of bone. As lamb grows older, blood recedes from bones; therefore in mutton the bone at joint is smooth and rounded. Good mutton.
The best,—light, flaky, and tender. To pastry belongs, 1st, Puff Paste; 2d, Plain Paste. Puff paste, which to set bounds to the fumes of sulphur of which Pliny gives no account whatever; though he had a perfect knowledge of that language.
