Stalk celery, one cup soft.
Three-fourths yard long. Sew up in a saucepan, sprinkle with salt and pepper, dredge with flour, and dot over with beaten yolk of one and one-half cups juice. Add oil, and roll to three-fourths cup, cool, and cut slices and cut as thinly as possible twelve selected smelts. Cut off tip of spoon on a board sprinkled with coarse crumbs browned in remaining butter. Season.
